Chapter 6: Chapter 6- participation



I called over to the boys, "hey can I help you guys make rosca when you start working on it?"

Aksel was 17 now, he was about to learn too, so it shouldn't be too much for Austin and Hal to do, teaching me that is.

Austin nodded, "when dean goes to deliver the pizza crusts, you can come learn once your orders are done."

I nodded, excited to be able to learn to make bread. She smiled. "Alright then!"

I made quick work of my cake orders after that and in no time the familiar Bing! Rang out.

And I slid on over next to the boys, excitement boiling over. "Ok teach me!"

Austin laughed and so did Aksel.

"Ok so here's the recipe:" Austin said, pulling out a paper

It called for milk, yeast, sugar, bread flour, flour, salt, butter, eggs, oil, and orange zest.

Austin got to work zesting the oranges, sanding off the outer peel with a hand held grating tool and then handed it to me. "You do the rest."

I looked at the mountain of oranges in front of her, "really?" Austin nodded and Hal snickered.

"She thought it would be easy at a large scale bakery like this haha!"

"It's not large scale." I grumbled.

Aksel laughed.

I began grating and I grated and I grated.

With every orange that I zested I lost more patience.

Why so little exp? Gaaaa!!!!! I exclaimed in my mind, exasperated.

90….+2 exp -20 MP and ...91….done! I exclaimed to the boys who had already put together the dough and were kneading it.

Great, now 2 oranges worth for each of our loaves, Austin instructed.

I looked at my pile and grumbled. "Well how am I supposed to do that?? It's all mixed in!"

"Grate two more oranges." Aksel suggested, "then you can weigh the shavings and you will know."

The boy was bright. I nodded, "alright."

I can do this.

I shaved the last two oranges as if my life depended on it, it took the rest of my MP but I did it. My arms were like jelly after that. The boys took some of the zest and kneaded it in and then placed the dough into the proofer box.

"I didn't get to pay attention to what you did." I complained to Austin.

"Don't worry yourself." He said. Mix 1 1/4 cup of milk with a tablespoon of sugar and 3 1/2 tsp of yeast and wait five minutes."

I did as I was instructed. Aksel came over next to me and watched as well.

He smelled of strong cologne, I cringed my nose inside.

"Ok now sift the bread flour and the flour with the salt." He instructed.

I measured out 4 and 1/4 cups of the bread flour and Aksel measured 4 1/2 cups of the regular flour.

I added the 4 teaspoons of salt and sifted it all in a bowl.

Austin came over and dumped out the bowl on the counter and showed me how he made a ring out of it and cracked 7 eggs, a tablespoon of vanilla, and the orange zest and oil into the middle like a bunch of liquid contained in a nest.

"This is called a well." Austin explained.

That I already knew.

He cut in some pieces of butter and then explained he liked it cold.

"Now we gently knead it like this." Austin said as he gathered some flour from the ring and mixed it with the eggs and then incorporated some more. "We keep adding more until the whole thing gets incorporated and then you can knead the ball of dough. Be careful not to spill the liquid. Keep a ring of flour around it as you go."

I did what he said with utmost curiosity. My MP went up as I kneaded the dough.

"I'm doing it!" I exclaimed and Austin smiled, "good job!"

The system rewarded me 500 EXP as I put my contribution into the proofer.

I smiled, proud of myself.

"Now to let it double in size." Austin explained. "Let's go make membrillo and sugar paste."

Austin mixed an egg yolk with some flour and powdered sugar and butter. "The sugar paste is a decoration." He explained.

I watched as he took his ball of dough from the proofer and piped paste onto it like strips.

"If you want to you can dye it with food coloring too." He said. He mixed in some pink and made a chocolate version. This is similar to making conchas, another Mexican brioche." He said. "The paste is very much the same thing."

He pulled out some membrillo he had already made and then some candied orange peel, mango, and cherries.

"Fruit goes on top. And there you go!" Austin exclaimed as he put his creation onto a pan.

He brushed it with egg wash and then put it in the oven with hal and Aksel's bread as well.

"You can decorate it with lots of things." Austin said. Even cream cheese and jalapeños can go inside."

"..or chorizo which is Mexican seasoned sausage, or Nutella. It depends if you want it sweet." Hal told me.

I watched as the bread baked and the boys decorated more.

I decorated mine when it came out of the proofer and proudly put it into the oven.

"Now to make the membrillo for tomorrow and the guava paste. We use something like a pear called quince and guava is another fruit."

Austin said taking me over to the stove. He cut up 8 cups of guava and mixed it with 8 cups of sugar and some lime juice and water.

I watched as he stirred it. "I have to stir it for 40 minutes." He explained, "why don't you cut up the pears. We will be making membrillo my way." He said. I cut up 8 cups of pear and then he had me put 15 guava. My fruit begak softening in the pan as I sautéd it like he was doing and I noticed his was pink while mine was white. "You should dye yours green." He said to me "so it looks like Christmas colors."

"Ok." I said going for the food color.

Austin added some red to his guava paste so it looked red and I added green to mine.

Rosca is a bread for three kings day, the kings that were going to announce the birth of a god in the future.

(In Evelyn's time she looked forward to Jesus, not remembered him, it was a different story but it hadn't happened yet.)

It was prophesied that when the god was born he would be visited by three kings.

It was one of Evelyn's favorite traditions.

They strained the seeds out of the sauce once it thickened and then put it into a mold with parchment paper and put it into the fridge.

"Ok!" Austin said, we will make more bread tomorrow!"
